Mango Bread
2 c Whole Wheat Flour
1/2 c Sugar
2 t Baking soda
2 t Cinnamon
1/2 t Salt
3 Eggs lightly beaten
1/2 c Oil (soybean or canola)
1/2 c Raisins
1/2 c Chopped nuts (walnuts or macadamia)
2+ c Diced mangos
1 T Lime Juice (optional)
Stir dry ingredients together with whisk
Stir in eggs and oil
Add rest of ingredients
Pour into a greased 13 x 9 pan
Bake at 350 until done (maybe 30 minutes).
Test with toothpick, etc.
...I usually make 3 batches of this recipe at a time, divide the batter between two pans, and bake them in a convection oven. Because I love mangos and avoid processed sugar, I typically use 10 cups of diced mango and I do not add sugar to the recipe
Mango Crisp
6+ cups sliced mangos
lime juice (optional)
1/3 c flour
1/2 c brown sugar
1 c oatmeal
1/3 c melted butter
1 t cinnamon
½ t salt
top and bake
